STEP 11 - CHOCOLATE PEPPERMINT MOUSSE

One of the best parts of the Holiday Season is all the yummy treats and desserts! Here’s one that will have everyone talking.

 

DOCTOR PEPPERMINT’S MERRY MOUSSE RECIPE

• 13 oz. bitter or semisweet chocolate

• 2 tbsp. unsalted butter

• 2 large egg yolks

• 1 1/2 cups heavy cream

• 2 tbsp. superfine sugar

• 1 tsp. vanilla extract

• 3 drops Peppermint Essential Oil

• For an added twist, also add 3 drops of Wild Orange Essential Oil

In a microwave-safe bowl, combine the chopped chocolate and butter. Heat in the microwave until melted—about 35 seconds, depending on your microwave—and stir to melt completely. Whisk in the egg yolks and set aside to cool.Pour the cream into the chilled bowl of a mixer and beat on medium speed until it starts to thicken. Add the sugar and vanilla, and whisk until the cream starts to form stiff peaks. Add the Essential Oils to the chocolate mixture and carefully fold the whipped cream into the cooled chocolate mixture. Serve immediately or cover and chill until ready to serve.
